How Mondelēz Engineered a Crunch That Waits for You
Mondelēz patented a way to make snacks stay crisp and chewy, only revealing their hidden texture when you bite.
In composite bakery and snack formats, moisture is the enemy of texture contrast. Water migrates, equilibration happens, and that satisfying crunch fades long before the product reaches a consumer.
Mondelēz created a system that combines a dry, particulate centerfill, containing a crystalline sweetener and 6-25 wt% food acid with a higher-moisture chewy shell, around 6-7 wt%. Left alone, these would equilibrate and collapse both the texture and the intensity.
So the formulation preserves the separation until the consumer takes a bite. Chewing disrupts the structure and triggers a sharp sensory shift. The goal in snack design is now maintaining that point of transition embedded within the product structure.
Beyond texture contrast, the broader challenge for snack innovation is balancing multiple competing demands, including nutritional function, taste, allergen safety, and structural integrity, all at once.
